The comfort food thread got me thinking about food, and I realized that we eat a lot of the same stuff. I love to try new stuff so I want to know what you guys make for supper or your favroite recipe.
I made Hot Taco Salad for supper tonight and I got a lot of "again?s." But it is really good, here's the recpie.
1lb browned ground turkey or beef (I always use turkey) 1/2 chopped green pepper 1/2 chopped onion add one can hot chili beans
Sauce: 1 8 oz jar taco sauce (I use medium) 1 10 oz can enchlada sauce 1 8 oz can tomato sauce
put corn chips in the bottom of a bowl, add meat and bean mixture, then sauce. Next put on cheese and melt in microwave for a few seconds if you want to. After that add whatever you like on tacos.
I think it is great, and my kids can eat it with a spoon and don't have to struggle with a taco shell.
So, please help me add a little variety to our meals!!

Make little chicken nuggets:
works best with boneless chicken breast, but you can always debone and cut up:
-cut up chicken in to about 1 in cubes- -mix about a half cup of flour with a few table spoons of your favorite seasoning -fry in butter for about 2 minutes and just keep flipping on all sides until done in the middle.
All of it depensd on your time and taste. Bigger pieces of chicken wouls be ok. Less flour and more seasoning would be fine.

Since you obviously like Mexican, here's an easy variation of a Mexican Chicken Casserole: 4 boneless, skinless chicken breasts, boiled until done 1 large bag Nacho Cheese Doritos, crushed 1&1/2 can cream of chicken soup 1 can rotel 1 large bag shredded cheddar cheese Completely cover bottom of casserole dish with 1/2 bag of chips. Tear the chicken into small pieces and lay that on top of the chips. Sprinkle about 1/4 of the bag of shredded cheese on top of the chicken. In sepaerate bowl, combine the soup and rotel, mix well. Pour the mixture on top of the chicken and cheese. Completely cover the mixture with more chips (you may have some chips left in the bag, you want to just cover, don't use too many or it will make the casserole dry.) Then cover the whole thing with as much shredded cheese as you like. (I use most of the rest of the bag, we like it cheesey! ;D) Pop it in the oven and cook for about 30 - 45 minutes on 350. The chicken is already done, so you just need to make it hot and for all the cheese to melt. Don't turn it up too high, or the chips will start to brown. Yum! I like this because it's easy and you can play with it. If you want it spicier, you can use the spicy Nacho cheese chips and the hot rotel and then add jalopenos to the top or put jalopeno juice in the soup. My kids won't eat it that hot. If you like it soupier (I just invented a word! ), you can use more soup and Rotel. Some people use 1 can cream of chicken and 1 can cream of mushroom. It all depends on how you like it!
